Smoked Gouda Mac and Cheese

Ingredients:

  • 8 oz elbow macaroni
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup smoked gouda cheese, grated
  • 1 cup sharp cheddar cheese, grated
  • ½ tsp paprika
  • ¼ tsp ground nutmeg
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Cook the Pasta: Boil macaroni in salted water until al dente. Drain and set aside.
  2. Make the Cheese Sauce: In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk, stirring constantly until the sauce thickens, about 5 minutes. Add smoked gouda, cheddar, paprika, nutmeg, salt, and pepper. Stir until cheese is melted and smooth.
  3. Combine: Mix cooked macaroni with cheese sauce until well coated. Serve hot.
