Shrimp and Grits with Andouille Sausage

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1 cup stone-ground grits
  • 4 cups chicken broth
  • 1 cup sharp cheddar cheese, grated
  • 4 tbsp butter, divided
  • ½ cup andouille sausage, sliced
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 2 tbsp fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Cook the Grits: In a pot, bring chicken broth to a boil. Stir in grits and reduce heat to low. Cook until thickened, about 20 minutes. Stir in cheddar cheese and 2 tbsp butter. Keep warm.
  2. Cook the Shrimp and Sausage: In a skillet, melt 2 tbsp butter over medium heat. Add sausage and cook until browned. Add garlic, shrimp, and Cajun seasoning, and cook until shrimp are pink, about 3-4 minutes.
  3. Combine: Serve shrimp and sausage over grits, garnished with fresh parsley.
