Shrimp and Grits with Andouille Sausage
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1 cup stone-ground grits
- 4 cups chicken broth
- 1 cup sharp cheddar cheese, grated
- 4 tbsp butter, divided
- ½ cup andouille sausage, sliced
- 2 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 2 tbsp fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
Instructions:
- Cook the Grits: In a pot, bring chicken broth to a boil. Stir in grits and reduce heat to low. Cook until thickened, about 20 minutes. Stir in cheddar cheese and 2 tbsp butter. Keep warm.
- Cook the Shrimp and Sausage: In a skillet, melt 2 tbsp butter over medium heat. Add sausage and cook until browned. Add garlic, shrimp, and Cajun seasoning, and cook until shrimp are pink, about 3-4 minutes.
- Combine: Serve shrimp and sausage over grits, garnished with fresh parsley.
