Creamed Collard Greens with Bacon
Ingredients:
- 1 lb collard greens, stems removed and leaves chopped
- 4 slices bacon, chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- ½ cup heavy cream
- ¼ tsp crushed red pepper flakes
- Salt and freshly ground black pepper, to taste
Instructions:
- Cook the Bacon: In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon and set aside.
- Sauté the Onions and Garlic: In the same skillet, add onion and cook until soft, about 5 minutes. Add garlic and cook for another minute.
- Cook the Greens: Add collard greens to the skillet and cook until wilted, about 5-7 minutes. Stir in heavy cream, red pepper flakes, salt, and pepper. Simmer for 5 minutes until thickened. Top with crispy bacon before serving.
