Skillet Cornbread with Honey Butter

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk
  • 2 eggs
  • ½ cup unsalted butter, melted (plus extra for greasing the skillet)
  • ¼ cup honey

Honey Butter:

  • ½ cup unsalted butter, softened
  • 3 tbsp honey
  • ¼ tsp salt

Instructions:

  1. Prepare the Batter: Preheat the oven to 400°F (200°C). In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt. In another bowl, whisk together buttermilk, eggs, and melted butter. Pour wet ingredients into dry ingredients and stir until just combined.
  2. Bake the Cornbread: Grease a cast-iron skillet with butter and pour in the batter. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  3. Make the Honey Butter: In a small bowl, mix softened butter, honey, and salt until smooth. Serve warm cornbread with honey butter.
